Barbara talks about the hybridized wheat of today and how it changed the gluten or protein structure. Pasta, biscuit, cake, etc. all made out of the hybridized wheat. This explains the gluten-intolerance of today with the 2 main symptoms being brain fog and bloating. Age gets blamed for so many things.

37:15 Though fruit is alkaline, if a person has a presence of yeast in their body and they’re eating a lot of fruit, the yeast feeds on the sugars in the fruit. As the yeast feeds on the sugars in the fruit, it gives off acetic acid, lactic acid, uric acid, and alcohol. 38:55 Acid-Forming Foods. These acid-forming foods are high in acid-forming minerals — phosphorus, sulfur, and chlorine. Meat, refined sugar, hybridized wheat, aged cheese (Blue-veined cheese. What is the blue-vein? Mold.) The only cheeses not in that category —cottage, ricotta. She’s not saying that they are okay because usually they come from cows who have been not been fed well. Caffeine. All your caffeine drinks have an acid effect.

41:02 Alcohol - though it’s not a food, it creates an acid environment in the body. Tobacco as well.

41:25 All the grains other than the ones that sit on the alkaline side. All your other legumes (which I didn’t list), All your other nuts other than the ones on the alkaline list, have an acid effect. 

41:40 To maintain the 6.5 environment, we need to be consuming 20% acid-forming foods, 70-80% alkaline-forming foods. The 20% should come from the grains, legumes, and nuts (from the acid-forming side).
